Hi everybody and Happy New Year! It%26#39;s been awhile since I%26#39;ve posted but I lurk here everyday to see what%26#39;s happening on my favorite island!
It%26#39;s only been five months since my last visit but it seems like forever and boy do I need to get back there! It%26#39;s cold here, the trees are bare and now that the holidays are over it%26#39;s back to work as usual! Yuck.
In late June, early July of last year hubby and I brought our adult children and only grandchild down for a family vacation that was to say the least wonderful! Lots of great memories but the most talked about at our holiday gathering was the Hogfish Tacos! I%26#39;ve searched this site to see if I could find a recipe but haven%26#39;t had any luck. Is there one to be had? I know even with the recipe it would be hard to duplicate, especially living in the midwest but I%26#39;d love to surprise my gang with a meal consisting of fish tacos and keylime pie. Any help would be appreciated!
Congrats to all of the new TA Experts and I%26#39;m so sorry about the loss of Captain Tony. Never met him but felt I knew him through all of you.
Hogfish tacos
You can make fish tacos with any fresh MILD fish you can find. Bake it or grill it off and add bowls of finely shredded lettuce, tomato, pico de gayo, onion, peppers, whatever your crowd likes. Use soft tortillas. Sour cream too. Some guacamole on the side is a nice addition, and a magarita bar would be nice with different flavors (cran, strawberry, orange, etc) to offer a difference.
Key Lime Pie:
Crust
16 graham crackers, crushed
3 tablespoons sugar
1 cube (1/4 lb) margarine or butter
Pie
4 large or extra large egg yolks
1 14 ounce can sweetened condensed milk
1/2 cup fresh key lime juice (approximately 12 Key limes)
2 teaspoons grated lime peel, green portion only
Whipping Cream For Garnish (Optional)
1/2 cup whipping cream
2 teaspoons granulated sugar
1/4 teaspoon vanilla
I N S T R U C T I O N S
Crust:
Mix the ingredients and press them into a 9'; pie plate. Bake in a preheated 350F oven for 10 - 12 minutes until lightly browned. Place on a rack to cool.
Pie Filling
Use an electric mixer and beat the egg yolks until they are thick and turn to a light yellow, don%26#39;t over mix. Turn the mixer off and add the sweetened condensed milk. Turn speed to low and mix in half of the lime juice. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended (just a few seconds). Pour the mixture into the pie shell and bake at 350F for 12 minutes to set the yolks and kill any salmonella in the eggs.
Serving
If you are using the whipping cream garnish, prepare the cream. Serve with a dollop of whipped cream.
Hogfish tacos
If Keywestaxi gives the recipe, I guarantee it is a good one. I have made several of his before. (All delicious.) Pepe%26#39;s Cafe also makes one of my favorite key lime pies in Key West and there recipe for it is available on their website, too.

Ya know, I%26#39;ve been to Keywest numerous times and have never been to Pepe%26#39;s. Always say I%26#39;m going too it%26#39;s just never happened. I%26#39;m adding that to my list for next time, along with Shrimp Shack.
Another seafood that my kids adored was the royal reds. I wonder how many millions of dollars it would cost to have some shipped.
Gees it sounds as though we just come to Keywest to eat, which isn%26#39;t the case but the seafood is just soooooo very good!

Someday I%26#39;d like to eat at the restaurant where Keysesttaxi is the chef. He seems to have lots of interesting recipes.
